What is Thaumatin?

Thomat is a white to cream-colored amorphous and odorless powder. The sweetness is refreshing, has no peculiar smell and lasts for a long time.

The sweetness is very strong, and its sweetness is 1600 times that of sucrose on average, but it depends on the concentration of dilution: 5500-8000 times when 0.00011%: 3500 times when 0.001%, 1300 times when 0.01%, and 850 times when 0.02% Times.

Its aqueous solution is stable at pH 1.8-10, and its isoelectric point is about pH 11. Because it is a protein, it can be denatured by heating and lose its sweetness, and it will lose its sweetness after being combined with tannins. In a high-concentration salt solution, the sweetness will decrease.

Easily soluble in water but insoluble in acetone. It has a synergistic effect and flavor-improving effect when shared with sugar sweeteners.

Product Application

1,Non-calorie sweetener, flavoring agent. It has the advantages of enhancing flavor, concealing bitterness, improving taste (producing thick and creamy taste), and being able to compete with other sweeteners.

2,For general food and health food. It is suitable to be used in gums, beverages, cold drinks, desserts, baked goods, etc. in conjunction with sugars such as sucrose.

Product Function

1,Thaumatin is a low-calorie (virtually caloriefree) protein sweetener and flavour modifier. The substance is often used primarily for its flavour modifying properties and not exclusively as a sweetener.

2,The thaumatins were first found as a mixture of proteins isolated from the katemfe fruit (Thaumatococcus daniellii Bennett) of west Africa. Some of the proteins in the thaumatin family are natural sweeteners roughly 2000 times more potent than sugar. Although very sweet, thaumatin’s taste is markedly different from sugar’s.

3,The sweetness of thaumatin builds very slowly. Perception lasts a long time leaving a liquorice-like aftertaste at high usage levels.
Thaumatin is highly water-soluble, and stable to heating and stable under acidic conditions
