Gardenia blue is a natural blue pigment made from the fruit of the Rubiaceae plant Gardenia. The staining of protein is stronger than that of starch.
Insoluble in organic solvents. Gardenia blue is almost odorless and tasteless. There is no change in the color tone within the pH value of 4.0-8.0, and the color will not fade when heated at 120°C for 60 minutes. It is hardly affected by Ca2+, Mg2+, Al2+, etc., but it becomes deeper when it encounters Fe2+ and Sn2+ when it is acidic.
