Beta-carotene is a source of carotenoids and vitamin A. It is soluble in water, propylene glycol, glycerin, and vegetable oil. Good light fastness.
The dilute β-carotene solution is orange-yellow to yellow, and orange when the concentration increases. There is no change in color when heated at 100°C for 20 minutes. Acid-resistant, stable at PH2.5-7.0, and not affected by ascorbic acid and other reducing substances.
